- Pizza is always an easy one for the budding new cooks to start with. Using lebanese style bread wraps for the base with the addition of olive oil, fresh tomatoes and grated cheese, various other optional toppings may be added. Other suggested toppings are fresh red capsicum, red onion, baby spinach leaves, sliced ham, olives and avocados, and then baked in a hot oven for approximately 5 minutes.
- Nachos is another way to include healthy food into meal preparation. A shallow dish can be layered with pre cooked, seasoned pulse ( frijoles, mashed lentils or similar) and then a layer of tomato salsa, red onions and green capsicum. To this dish, you now add 250gms of unsalted corn chips by standing each chip upright into the layers followed by a generous cover of grated cheese. Bake in a moderate oven until cheese is melted.
- Garden salads are easy and the ideal accompaniment to both pizza and nachos, all you need is a large bowl and washed fresh vegetables. This is a good opportunity to help the budding cooks understand the importance of green foods. A salad does not have to include kale and mung beans to be nutritious. Green leaves such as baby spinach, lettuce and parsley are also healthy. As well as tomatoes and cucumbers, there are many more delicious foods which can be added to a garden salad such as, baby corn, mushrooms, raw baby beans, nuts, shaved carrots, celery, spring onions, olives, apples, pears and so on. If the kids like it, let them add it in, it is a great lesson in variety.
- Fruit salad is a delicious way to start breakfast or finish any meal. Any combination of fresh fruit will create a dish that everyone will enjoy. Simply wash two or more pieces of fresh fruit, chop and toss into a bowl with the addition of a few drops of lime or orange juice. Served with low sugar yogurt and honey, this will be a family favourite for sure.
